Made mainly by water (92%), eggplants are rich in mineral salts and vitamins, especially of Vitamin B.
Our eggplants, which belong to the long and dark purple variety, are processed immediately after being picked, grilled, peeled by hand and preserved in sunflowerseed oil and extra virgin olive oil, the perfect combination to keep vegetables without affecting or masking their original taste. Aromatic herbs and a little vinegar complete the preparation.
Fresh raw materials and a careful processing technique preserve the vegetables' organoleptic qualities, mouthfeel and fragrance.
