Robiola cheese aged in leaves

WHITE RIND CHEESE WRAPPED IN FIG, CHERRY AND CHESTNUT LEAVES

Our leaf-wrapped Robiola cheeses revive the ancient Piedmontese tradition - now almost entirely lost - of aging cheeses by wrapping them in leaves to impart creaminess and distinctive aromas to the product. This process enriches and imparts surprising fragrances and sensations to a cheese already full of character.

The rind is nearly absent, covered by leaves. The paste is white in the center and straw yellow toward the outside, firm in the center but quite creamy toward the exterior due to the action of the leaves.

They are offered in boxes of 9 pieces with 3 types of leaves: chestnut, cherry, and fig.

Upon request, robiola cheeses wrapped in walnut leaves, grapevine leaves, and cabbage leaves are also available.
