SOFT CHEESE
Stracchino is one of the most beloved soft cheeses in Italian tradition, originally from Lombardy and widespread throughout Northern Italy.
Historically, the term "stracchino" derives from the Lombard word strach (tired), as it was produced using milk from "tired cows" returning from autumn transhumance - the arduous journey from the Alps down to the valleys. The movement and fatigue of the animals altered the composition of the milk, making it particularly suitable for this type of production.
It has a uniform milk-white color; a decidedly creamy, almost spreadable texture; and a sweet, delicate flavor.
In cooking, it is extremely versatile: great to enjoy on its own, spread on fresh bread, crostini, or piadina; a key ingredient for preparing cheese focaccia, savory tarts, or fresh pasta fillings; perfect for creaming risottos or as a creamy touch added at the end of cooking on pizzas.
