COW'S MILK CHEESE WITH JUNIPER BERRIES
Medium maturation soft-textured cheese produced with Piedmontese milk and traditionally aged on white fir shelves for about 30/60 days.
The thin rind covers a soft paste with fine eyes, white with straw-yellow hues; inside the paste, fragments of juniper berries can be seen.
The flavor is sweet and delicate, with notes of fresh butter; the addition of juniper berries directly into the milk gives the cheese a pleasant aroma typical of balsamic alpine forests.
Perfect when enjoyed with chestnut honey or red fruit jams (such as redcurrant or blueberries), which create a pleasant bittersweet contrast with the balsamic note of juniper. It pairs extremely well with rye bread, cereal bread, or artisanal Piedmontese breadsticks.
Recommended wines: it pairs with medium-bodied red wines characterized by fruity or spicy notes, such as a Nebbiolo delle Langhe or a Dolcetto, which recall the scents of the undergrowth. Also excellent with a structured and aromatic white wine.
